Sweet Potato Supreme

2 cups cooked, sliced sweet potatoes
2 Tbsp. cream or milk
2 Tbsp. melted butter
3/4 Tsp. salt
1/4 Tsp. paprika
1/2 Cup butter
3/4 Cup pecans, halves or chopped coarsely

Bake two large sweet potatoes whenever you are baking something else. Or use canned sweet potatoes. To sweet potatoes add: cream, melted butter, salt and paprika. Mix together. Spread in small greased casserole.

To make the topping: heat brown sugar and butter over low heat, stirring constantly, until butter is barely melted. (Is important not to cook after butter is melted or the topping will harden when the casserole is heated. I don't know why... ) Spread the brown sugar and butter mixture over the potatoes and cover with chopped pecans. Refrigerate until ready to heat. This casserole may be warmed in an oven of any temperature or in the microwave, but should be bubbling hot when served. Enjoy!!
